Our Sourdough Story
Good sourdough belfast bakers have been talking about for years is not complicated to describe. It has a crust that shatters when you cut it, a crumb that is open and chewy, and a flavour with just enough tang to make you reach for another slice. It is also, if we are honest, quite hard to do well. We have been doing it every day since we opened.

Where Our Sourdough Story Begins
Krumb was founded in 2024 by Sadhbh Baker, after 15 years working in some of Ireland's best bakeries. Sourdough was always at the heart of that journey. Learning to read a ferment, to know when a dough is ready to shape, to understand how a small change in temperature or timing shifts the whole flavour of the loaf. These are things you cannot rush, and we have never tried to.
Our large sourdough is made with a live starter we maintain and feed every day. It is the foundation of every loaf we bake, and it gives our bread a depth of flavour you simply cannot get from commercial yeast. A proper long, slow ferment. No shortcuts.
This is artisan bread the way it should be: handmade from scratch, baked fresh daily in small batches, with real care behind every single loaf.
Our Sourdough Belfast Locals Keep Coming Back For
We bake a classic sourdough and a seeded sourdough, both made from scratch every morning. The classic has a golden, blistered crust and that satisfying open crumb. The seeded version adds texture and nuttiness with a generous seed blend on top and worked through the dough.
Both loaves are scored by hand before they go into the oven. That scoring is not just for looks (though they do look lovely). It controls how the loaf opens up in the heat, giving you that signature ear on top and ensuring an even bake all the way through.
Fresh from the oven, they cool on the rack while the bakery fills up with that particular smell: warm bread, a hint of sourness, something deeply satisfying. We are not sorry that it makes people hungry.
Why We Make Sourdough the Long Way
There is a faster way to make bread. We know that. But the reason sourdough bread belfast deserves a proper sourdough is precisely because of what the long way gives you: better flavour, better crust, better keeping quality. A loaf made with a live starter and a slow cold ferment will stay good for days longer than a quickly proved loaf. The wild yeast and natural acids do their work gradually, and that time is in every bite.
We do not add improvers, preservatives, or anything you would not recognise. Flour, water, salt, starter. That is it. The skill is in knowing how to handle those four ingredients across a full bake day, and we have been honing that skill for a long time.
We champion Northern Irish producers and source locally where we can. Every element of what we make reflects a belief that good food starts with good ingredients and honest craft.
How to Enjoy It
Our sourdough is wonderful toasted with good butter. It makes an exceptional base for the BLT we serve in the cafe (made with our own focaccia too, but that is another story). It pairs beautifully with Ballylisk or Hegarty's cheese from our retail larder. And it is the kind of loaf that turns a simple lunch into something worth sitting down for.
Slice it thick. Toast it properly. Treat yourself to a bit of bakery magic on an ordinary Tuesday.
Questions We Get Asked
Do you sell sourdough loaves to take home?
Yes, our sourdough and seeded sourdough are available in store and on click and collect. We bake in small batches so it is worth ordering ahead, especially at weekends.
How long does your sourdough keep?
Because it is made with a live starter and a slow ferment, our sourdough keeps well for three to four days at room temperature wrapped in a cloth or paper bag. It also toasts brilliantly on day two or three.
What other breads do you make at Krumb?
Alongside our sourdough we make a seeded sourdough, batch loaf, wheaten, soda bread, and focaccia. All handmade from scratch and baked fresh daily.
