At Krumb we bake a plain sourdough that people love. But our seeded sourdough has its own following, and rightly so. There is something about the combination of a long-fermented dough and a proper seed blend that makes a loaf genuinely hard to resist. Once you have had a slice, toasted, with good butter, it is difficult to go back to anything else.

What Is Seeded Sourdough and Why Does It Work?
Seeded sourdough starts with everything that makes a great sourdough: a live starter, a slow ferment, a hot oven and proper shaping. Then seeds are worked into the dough or pressed into the crust before baking, adding texture, depth of flavour and a visual finish that makes the loaf look every bit as good as it tastes.
The seeds are not decoration. They change the character of the bread. They add a nuttiness and crunch that contrasts with the soft, open crumb inside. They make each slice more interesting. And depending on the seed blend, they bring their own flavours into conversation with the naturally tangy sourdough base. That is good baking doing what good baking should.
Seeded Sourdough at Krumb: Baked Fresh in Belfast
Our sourdough in Belfast is made from scratch every day in small batches at our bakery on the Ormeau Road. That means a proper starter, proper fermentation time, proper shaping and a proper bake. We do not rush it. You can taste the difference.
The seeded loaf is part of our daily bread selection alongside our plain sourdough, batch loaf, wheaten and soda bread. Each one is made the same way: by hand, from scratch, with ingredients we stand behind.
We are proud to work with brilliant Northern Irish producers and supply partners. The care that goes into sourcing the right ingredients is part of what makes Krumb what it is. Why the Seeds Matter
Let us break it down a bit. Seeds in a sourdough loaf do several things:
- Texture. They add crunch to the crust and a pleasant resistance in the crumb that makes eating the bread more satisfying.
- Flavour. Different seeds bring different notes. Sesame is nutty and warm. Pumpkin seeds bring a mild, earthy richness. Sunflower adds sweetness. Together they layer up into something genuinely delicious.
- Appearance. A well-seeded loaf looks beautiful. A dark, crackled crust encrusted with seeds, slashed before baking. It is one of those things that makes you want to take a photo before you eat it.
- Staying power. Seeded sourdough keeps well, toasts beautifully and tends to make the best sandwiches. It is a workhorse loaf as well as a showstopper.
How to Make the Most of a Seeded Sourdough Loaf
The short answer: toast it. A thick slice of seeded sourdough in a hot pan or under the grill, with salted butter melting into the crumb, is one of the great simple pleasures. From there:
- Good cheese. We stock Ballylisk and Hegarty's in our retail larder, and both are outstanding on a slice of seeded sourdough.
- Avocado, a pinch of salt, a drizzle of Honest Toil olive oil. A proper breakfast.
- Just butter. Do not underestimate it.
Krumb was founded in 2024 by Sadhbh Baker, who brought 15 years from Ireland's best bakeries to the Ormeau Road. The bread here carries that experience. Come in and try a loaf.

Is seeded sourdough available every day at Krumb?
Yes. Our seeded sourdough is part of our daily bake, Wednesday to Sunday. We work in small batches so it is worth coming early if you want to be sure of a whole loaf.
What seeds do you use?
Our seed blend varies but typically includes a mix of seeds that add both flavour and texture. Come in and ask us what is on today, we are always happy to talk about the bake.
Can I buy the cheese to go with it?
