What Artisan Really Means in a Bakery

The word artisan gets used a lot in food these days. Sometimes it means something. Sometimes it is just a label on a packet of bread that came off a production line. At Krumb, our artisan bakery in Belfast, it means something specific. And we think it is worth explaining exactly what that is.

What Artisan Actually Means at an Artisan Bakery in Belfast

Artisan baking means making things by hand, from scratch, with skill and with good ingredients. It means the person doing the baking understands what they are doing and why, and has taken the time to learn it properly. It means there is no halfway house, no mix from a bag, no shortcut that saves ten minutes but costs you flavour.

At Krumb, every single thing in our cabinet is made from scratch every morning. The croissant dough is laminated by hand, layer by layer, until it is ready. The sourdough is fermented slowly, as long as it takes, so the flavour develops properly. The pastry for the tarts is made fresh. The focaccia that goes into our BLT is baked in house. None of it comes pre-made or frozen. All of it is genuinely handmade.

That is what artisan means here. Time and skill, applied consistently, every day.

Small Batch Baking: Why It Matters

Baking in small batches is a choice. It would be more efficient to make larger quantities. But efficiency is not the point. When you bake in small batches, you have more control. You can respond to what the dough is telling you. You can make sure every croissant gets the attention it needs in the oven. You can keep the standard high instead of averaging it out across a huge volume.

It also means the cabinet empties every day. When something is gone, it is gone because it was genuinely fresh and genuinely good, not because we are saving some back. That is the honest version of small batch baking. We are proud of it, even on the days when we sell out earlier than we expect.

It is also why click and collect exists. Pre-ordering lets you guarantee your loaf or your pastry is set aside for you, which is very useful when the sourdough goes before 11am.

Craft and Community: Two Sides of the Same Loaf

Craft without community is just a workshop. At Krumb, the two are inseparable. Being an artisan bakery in Belfast means being part of this city and this neighbourhood. It means knowing your neighbours, sourcing from local producers, and building something that belongs to the Ormeau Road rather than just sitting on it.

Our supply chain reflects that. Stonebridge Farm supplies our rare-breed bacon. Ballylisk and Hegarty's supply our cheese. Lucid Coffee Roasters roast our beans. We use Honest Toil olive oil, serve Living Things sodas and Good and Proper tea, and use boards from Bough and Burr. Every one of those is a relationship, not just a transaction.

When you buy a sausage roll or a loaf at Krumb, the money does not disappear into a supply chain you cannot see. It goes into the bakery, and it goes to people like us who care about what they do.

What Handmade Bakes Taste Like

The honest answer is: better. A croissant that has been laminated by hand has a different texture and flavour from one that has been processed by machine. Sourdough that has been long-fermented tastes more complex and keeps better. A tart made from a fresh pastry shell has a different crispness to one that was made yesterday and reheated.

These are not small differences. Once you taste genuinely handmade bakes, the gap is obvious. That is not snobbery, it is just craft. And it is why people come back to Krumb again and again. Every last krumb of it makes the difference.

Questions We Get Asked

Is everything at Krumb really made from scratch?

Yes. Everything in the cabinet is handmade in our kitchen from scratch, baked fresh every morning in small batches. That includes the pastry, the bread, the sauces and the fillings.

Why do things sometimes sell out early?

Because small batch baking means limited quantities, and fresh bakes go quickly. Use click and collect to pre-order if you have something specific in mind, especially for weekend sourdough and popular pastries.

Do you use Northern Irish suppliers?

We champion local producers throughout. From Stonebridge Farm bacon to Hegarty's cheddar to Lucid Coffee Roasters beans, we source locally wherever we possibly can. It matters to us and it makes everything taste better.
