Knowing how to store sourdough properly makes a real difference to how long it stays fresh, how the crust behaves and how good that second-day toast turns out. Here is everything you need to know.

How to Store Sourdough: The Basics
The number one rule for how to store sourdough is to keep it away from plastic. A plastic bag traps moisture and softens the crust within hours, turning that beautiful crackling exterior into something sad and floppy. Instead, store your sourdough belfast loaf cut-side down on a wooden board or in a paper bag at room temperature. The cut surface resting on the board slows moisture loss from the crumb, while the crust stays exposed to the air and keeps its character.
Bread bins work well if they have some ventilation. A linen bread bag is another excellent option. What you are aiming for is a balance: protecting the crumb from drying out too fast while allowing the crust to breathe.
How Long Does Sourdough Stay Fresh?
A well-made sourdough belfast loaf is naturally longer-lasting than commercially yeasted bread. The lactic and acetic acids produced during fermentation act as natural preservatives. Stored properly at room temperature, a good sourdough will stay genuinely enjoyable for three to five days.
Day one is all about that crust: shatteringly crisp, the crumb still yielding and slightly moist. Day two and three are often when the flavour peaks, as the crumb firms up and the tang deepens slightly. By day four it is toaster territory, and excellent toast territory at that. Do not write off a loaf just because it is a couple of days old. Good sourdough rewards patience.
Should You Put Sourdough in the Fridge?
No. The fridge is the enemy of good bread. The cold temperatures in a domestic fridge accelerate starch retrogradation, which is the process that makes bread go stale. Your sourdough will go stale faster in the fridge than on the counter. It will also pick up fridge smells, which nobody wants.
The one exception is if you have sliced and buttered the bread for a sandwich and need to store the leftovers. In that case, a brief stint in the fridge is fine. But for an uncut loaf or a partly cut loaf, room temperature is always the right call.
How to Freeze Sourdough If You Need to Keep It Bread Fresh Longer
Freezing is the right approach if you want to keep bread fresh beyond a week. The key is to freeze sourdough while it is still at its best, ideally on day one or two. Slice it first, then freeze in a zip-lock bag or well-wrapped in foil. This way you can take out a slice or two at a time and toast straight from frozen.
To revive a whole frozen loaf, take it out the night before and let it defrost at room temperature, still wrapped. Once defrosted, ten minutes in a hot oven will bring the crust back to life beautifully. It will not be quite the same as fresh, but it will be very good indeed.

Can I refresh a sourdough loaf that has gone a bit stale?
Yes. Run the crust briefly under cold water, shake off the excess, and bake in a hot oven for ten to fifteen minutes. The steam created inside the loaf as it heats revives both the crumb and the crust. It will not be exactly like fresh from the oven, but it comes remarkably close.
Why does your sourdough stay fresh longer than supermarket bread?
