Why Our Menu Changes with the Seasons
One of the questions we get asked most often at Krumb is why the menu keeps changing. The short answer: because the seasons do. Baking in step with what is good right now, rather than what is available all year round, is at the core of how we work. It is what keeps our seasonal bakes Belfast customers come back for feeling genuinely exciting, and it is what keeps us genuinely excited to bake them.

Why Seasonal Bakes Make Better Bakes
Seasonal ingredients are simply better. Fruit picked at the right time of year has more flavour, more natural sweetness, more of everything you want in a bake. A rhubarb danish in early spring, when rhubarb is at its tart, brilliant best, is a completely different thing to one made from out-of-season rhubarb that has been shipped from somewhere it should not have come from.
Working seasonally also means we are always making something that feels relevant. There is a reason a warm spiced bake tastes right in October and a lemon tart tastes right in June. Food has a rhythm, and our menu tries to move with it. Our seasonal bakes Belfast regulars have come to expect something new with each visit, and we love living up to that expectation.
What Changes Through the Year at Krumb
Spring is when things get bright and fresh. Expect lighter flavours coming through: citrus, rhubarb, elderflower, the first strawberries. Our viennoiserie takes on fruit-forward fillings and our cakes start to reflect that shift from the heavier, warming notes of winter.
Summer brings stone fruit and berries, long days and people wanting something a little less rich. It is the season for our glossy fruit tarts, for lighter pastries and the kind of treat-yourself slice you want to eat in the sunshine. It is also when we lean into our coffee programme a little more, because there is nothing like a good iced coffee from Lucid Coffee Roasters alongside a summer bake.
Autumn is, if we are honest, our favourite. Apple, pear, blackberry, warming spice, the first hints of chocolate and caramel starting to creep back in. The artisan bakery belfast scene comes alive in autumn and we are right there with it. Kouign-amann with seasonal fruit, spiced buns, proper comfort baking.
Winter means going all in on indulgence. Richer pastry, deeper flavours, the kind of bake that feels like a proper treat on a grey Belfast morning. This is when our artisan bakery belfast roots really show: handmade, seasonal baking belfast style, doing what seasonal baking was always meant to do.
How We Plan Our Seasonal Menu
We work with Northern Irish producers where we can, which means our menu is partly shaped by what is growing locally. We talk to our suppliers, we pay attention to what is coming into season, and we bake accordingly. Nothing goes on the menu unless it is genuinely good right now.
Some things stay year-round because they are simply part of who we are: our sourdough, our hand-laminated croissants, our coffee. But around those anchors, the menu breathes and shifts. You might find a saffron bun in spring and a brown butter apple tart in October. That is the fun of it.
We also do a little seasonal baking belfast customers tell us they look forward to: limited specials around certain times of year that we bring back by popular demand. Watch our socials and get in early if you want to be sure of one.
The Joy of Not Knowing Exactly What You Will Find
We know some people like certainty. If that is you, click and collect is your friend: you can see exactly what is available and reserve it before you travel. But honestly, one of the things we love most about Krumb is the walk-in surprise. Popping in on a Wednesday morning and finding something on the counter that you have never seen before, something beautiful and seasonal and made from scratch that morning.
That little moment of discovery is a bit of bakery magic we try to create every day. It is why the menu changes. It is why we will never stop changing it.
Questions We Get Asked
How do I know what is on the menu today?
We post on our social media most mornings to show what fresh seasonal bakes Belfast folk can find that day. You can also check our website or call ahead. Better yet, use click and collect to grab exactly what you want before it sells out.
Do you take requests for seasonal items?
We love hearing what people enjoy. We cannot always guarantee a specific item on a specific day, but your feedback genuinely shapes what we bring back season after season. Let us know what you love.
Are your seasonal ingredients local?
Where possible, yes. We champion Northern Irish producers and source locally. Not every ingredient is available locally year-round, but when it is, that is where we go first.
