Most of what makes a sausage roll great or forgettable is the meat. We use sausage from Stonebridge Farm, a rare-breed pork producer we are genuinely proud to work with. Rare-breed pork has a depth of flavour that standard supermarket sausagemeat simply does not. It is fattier in the right way, more fragrant, and it holds together beautifully inside a pastry case without turning dense or dry.

We season it simply. The sausage is good enough that it does not need much else. What it needs is a proper casing, and that is where our pastry comes in.
